    I don't have that kind of patience. Besides, life turns on a dime, you never know what's around the corner. I'd rather enjoy it now. I have a nice bottle of german auslese chilling for friday that i bought last week. i know that seems counterintuitive when it comes to growing orchids but it is very serene in a greenhouse full of plants. Better than xanax.

    I find that a year or 2 of bottle time really helps if you're tasting (& buying) at the wineries. While they may be "ready to drink" now, more age usually does good things to a young wine.
